Bean Dip


This recipe is from my son, Larry. He has taken a simple dip recipe and enhanced it considerably. From a bean dip, he has changed it into a "toastada" event par excellance! Super Bowl Sunday, a sunny weekend in the patio or just kicking back in front of the TV, it will be a hit at your next party.

Preparation Time : 45 minutes

Serves 8 to 10 persons

Ingredients:
  • 1 pound lean ground beef
  • 1 large brown onion, diced
  • 1 medium red Bell pepper
  • 1 medium green Bell pepper
  • 2 or 3 garlic cloves (chopped finely)
  • 1 medium green chile pepper(Anaheim)or 1 Jalapeño pepper, chopped
  • 1/2 cup sour cream.
  • Hot Sauce(optional)
  • Large dipping chips - flour or corn
 
  • 1/2 teaspoon each of salt and pepper
  • 1 15-ounce can crushed tomatoes
  • 2 8-ounce cans tomato sauce
  • 2 16-ounce cans Rosarita refried beans
  • 2 cups chopped lettuce
  • 1 cup grated cheese.
  • Pico de Gallo salsa mixture
    • 2 diced tomatoes
    • chopped cilantro (1 small bunch)
    • 1 bunch chopped green onions
Procedures:
  1. Saute ground beef, crumbling as you go, until no longer pink. Drain excess grease.
  2. Add onions, bell peppers, garlic and chili pepper. Continue cooking until vegetables are tender. Add salt and pepper
  3. Add crushed tomatoes, tomatoe sauce and stir to mix. Fold in refried beans until just combined.
  4. Pour mixture to a medium to large pan or seving dish with sides and spread evenly.
  5. Add chopped lettace to cover top of mixture.
  6. Add Pico de Gallo salsa mixture to top of lettuce. Cover with shredded cheese. Add sour cream on top.
  7. Add optional hot sauce for extra zing, if desired.
  8. Serve with dipping chips on the side. As an added treat, garnish with Pepperoncini & feta cheese if desired.
