Club Bacon Turkey

and Ham Roulade

I often thumb through my collection of cookbooks looking for ideas, suggestions for something new on the dinner table. Some have come bundled with new purchase equipment, and some are purchased such as the Taste of Home series. On this particular day I wasn’t looking for anything in particular, just browsing for ideas and the recipe for Turkey Club Roulades caught my eye. I don’t use a of bacon and the precooked variety is usually sufficient for my usual needs. The precooked bacon finishes quickly so I decided to precook the asparagus to even up the cooking times. I steamed the asparagus to what I estimated was a few minutes shy of done and let the asparagus cool and dry before assembling the roulades.

Makes 12 roulades
Ingredients:
  • 1 bunch fresh asparagus
  • 12 slices deli smoked turkey
  • 12 slices pre-cooked bacon
  • Ranch Dressing®
  • 12 slices deli honey ham
  • 12 slices provolone cheese
  • Fresh ground black pepper, to taste
Procedure
  1. Bend and snap of the woody ends of the asparagus spears. Steam cook until it is almost done. Place the asparagus in a colander and set aside to cool and dry. Lay a slice of ham and overlap with a slice of turkey. Season to taste with pepper and Ranch Dressing®. Add a slice of provolone cheese at the top. Add asparagus spears over the cheese. Starting at the cheese and asparagus end, roll the ham and turkey around the cheese and asparagus forming a tight bundle. Wrap with a slice of precooked bacon and secure with toothpicks as needed.

  2. Preheat the air fryer to 375֯ F. Prepare a tray with a parchment sheet and arrange the roulades being careful not to crowd. Do in batches as needed. Cook for 6 to 8 minutes or until the bacon is just crisp.

  3. Remove the toothpicks. Add a splash of Ranch Dressing® if desired.Serve on a bed of rice. A small salad makes a good accompaniment.

  4. This batch of asparagus I used in the above recipe was below par and the presentation effect of healthy fern heads was lost. If I have small stalks the next time I make this recipe I will cut the asparagus so he entire piece is inside to roll.
