Potato Wedges

Oven roasted potatoes are a quick and easy alternative to deep fried potatoes. They can be prepared equally well in either a regular oven or a toaster oven. Quick to prepare and clean-up is a snap. Just roll up the foil and toss the mess away. Goes great with burgers.

Serves 2
Ingredients:
  • 2 medium potatoes
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon seasoned salt
  • 1 teaspoon onion powder
  • ½ teaspoon celery salt
Procedure
  1. Make an aluminum foil tray on a cookie sheet. Spray liberally with non-stick cooking spray.
  2. Place spices in a plastic bag large enough to shake the potatoes.
  3. Peel potatoes. Cut in half lengthwise. Lay flat side down and cut in half lengthwise again to make 4 large wedges. Cut each wedge in half to make 8 wedges. Add the potatoes to the spice bag and shake and knead to coat the potato wedges evenly with the spice mix.

  4. Arrange the wedges on the oiled foil with flat, cut edge of the wedge down. Bake in a preheated 375° oven for 30 minutes. After 15 minutes, turn the wedges to the opposite flat side and finish cooking.
